Oxidation mechanism, and the factors that are responsible for the initiation of oxidation are reviewed. The various methods with which the oxidation can be traced are mentioned. With this knowledge in mind the prevention of oxidation is reviewed. First the mechanism, then the various general precautions to be taken, and the antioxidants. Examples are cited.
